Mean Green:
4 stalks of celery
1 cucumber
2 green apples
1 thumb size ginger root
6 kale leaves

Stir frying is quick and easy way to get vegetables and protein

Stir Fried Chicken
It only 15 minutes to make! And, cooks less than 10 minutes.
1/3 – ½ teaspoon Olive Oil
3 oz boneless chicken breasts cut into strips (partially freeze, it makes easy cutting)
1 small red onion
1 clove minced garlic
1 teaspoon mild curry powder
1 teaspoon dried mint
1 sweet bell pepper (for color, red, green, or orange)
1 small can pineapple chunks, drained (fresh pineapple is best)
2 teaspoons slivered almonds (optional)
In a wok or large fry pan, heat the olive oil, add the chicken and stir fry with onion about 5 minutes or until the chicken is cooked thoroughly. Add the spices, and the pepper and pineapple and stir fry until heated through – then add the almonds on top to serve.
